Dairy Free Banana Nut Bread

I hate wasting food so when the bananas get too ripe for my family to eat, we make muffins. Food that tastes good and has nutritional benefit is important when you have to restrict other foods. I created a healthy mix(hemp seeds, oats, flaxseed, and cacao nibs) to add into my baking. Cacao nips add great crunch and texture. Links to the benefits are below.

1/2 cup oil

1/2 cup of sugar

3 tbsp of molasses

1 tbs of honey

1 cup flour

1/2 mix of health( 3 tsp of hemp seed, 3tsp of oats, 3 tsp of milled flaxseed, 3 tsp of cacao nibs) I sneak these things in because each one has a nutritional benefit. If you do not have these then just replace with a 1/2 cup flour. I am really big on purposeful foods.

1 tsp pf baking soda

1/4 tsp of salt

3 mashed ripe bananas

1/2 cup of walnuts to top the muffins. And maybe a sprinkle of sugar if you want more sweets.

Mash bananas first. Save nuts for topping or you can add to mix instead. I like to top my muffins with the walnuts. Some say add dry ingredients to wet. I don’t and it’s fine. Mix everything and bake for 30 minutes at 350, tooth pick test and make sure it pulls through clean.
