Dairy Free Cornbread Casserole
one box of Jiffy
2 eggs
1/2 cup of your favorite dairy free butter we use various but today I used “I can’t believe its not Butter Vegan”
1 can of corn drained
1 can of creamed corn(always check ingredients for milk)
Funny thing my oven dies in the midst of making this. I found you can microwave the batter just like they do for mug cakes and it’s just the same. I used my porcelain ramekins dishes so the batter is cooked all the way through the center. I did 3/4 cup per dish. I had about 4/5 cups filled. You can use mugs or small dishes if you have them. I filled and microwaved for 3 minutes. I live in Florida. I probably will never bake them again. When I bake the whole house gets hotter. If I can save myself from some heat I will!!
Up until today I have always baked in a circular cake pan at 350 degrees for about 55 minutes until the top edges are just a tad brown and a toothpick pulls out clean from the center.
