Fresh Garlic, Roasted Red Peppers, and Tomato Appetizer
I have been picking up a surprise box of fruit and veggies from a local farm distribution center. Only $10!!! Defiantly check our your local farm to see if they are suppling boxes. This farm was effected by covid-19 when the restaurants were shut down. They normally supply all the restaurants in the area but now have moved to suppling our community with fresh mixed boxes of fruits and veggies. It is a drive through and I don’t even have to get out of the car. They have been my inspiration for our family dinners.
Todays box had a lovely array of fresh tomatoes and red peppers. It reminded me of an appetizer my dad always made in our Garden State(NJ) summers. Fresh cut bread, tomatoes, roasted red peppers, swimming in garlic, olive oil, and topped off with fresh mozzarella. Lol, We would smell like garlic for days. This is easily turned into dairy free option by just adding you favorite dairy free soft cheese or even dairy free cream cheese.
2 cup of sliced tomatoes, I used cherry, vine and Roma tomatoes
6 cloves of garlic
1 tsp salt
1/2 cup olive oil
1-2 red peppers
1 baguette(dairy free)
Preheat oven to 450 degrees. Line a pan with foil. Red pepper needs a little salt pepper and a coat of olive oil.
Heat for 15-20 skin side up. They will start to brown a when ready.
I leave the skin on but you can peel off once cooled.
Add all the ingredients in a small bowl and let sit for an hour or so covered. This gives time for the juices to seep out. Toast a baguette and spoon on top. You can also add your favorite dairy free cheese.
