Dairy Free Beignets

It is about 3-4 hours to complete, but half that if you don’t accidentally take a nap.

1.5 cups warm water

1/2 cup of coconut palm sugar

1 pkt of active yeasts

2 eggs

1 cup ripple “milk”

1 and 1/4 tsp of salt

3 cups of bread flour

2-3 cups of all purpose flour

1/2 cup crisco

one quart of peanut oil

2 cups of powdered sugar

 Add warm water, sugar, and yeast into a cup. Wait 15 minutes for a foamy top. The yeast reacts with the sugar for more airy dough. If you yeast does not foam, it is probably bad or expired, it must foam.

Add the rest of your wet ingredients together(the eggs, and ripple “milk”) to the yeast mix. Mix together. Hold off on Crisco.

I add the salt and 1/2 the flour (3cups of the bread flour) to my kitchen aid with a dough hook. Then slowly incorporate the wet ingredients. Once the wet is incorporated, I added 1/2 cup of crisco. Add the rest of the flour till you get a sticky ball consistency. A ball will form around the dough hook and will be a little stick to your fingers.

Once mixed I took two large bowls greased them with crisco and made two balls of dough for each. Two bowls for more room to rise. Lightly grease the dough balls by turning the dough over a few times in the bowl. This helps the dough from stick as it rises.

I turned the oven on just for a minute to add some heat then turned off. I then placed moist kitchen towels over the top of each bowl. Place in oven(make sure its OFF) and let rise for almost 3 hours. It should have been two but I took a nap. It is really important to be patient and just let it rise.

We flowered the counter and folded dough to get lots of air pockets then rolled out to 1/4 inch and used cookie cutters to cut out. You can cut squares with a knife as well, at least two inches. Let your cutouts sit and rise again for 30 minutes.

Place oil in a pot at least 3 inches deep. Turned oil to medium low until bubbles form on a toothpick. Fry till a light brown, dry on paper towels. Use a paper bag or tupperware to shake the beignets into the sugar.
