Pad Thai

First day jitters for my 2 year old daughter have finally calm down. She walks the school hallway waving hi to everybody, immediately goes to her teacher, raises her arms to be picked up, which Ms. Stacey happily opens her arms. It dawns on me I’ve been replaced.

I was asked to bring in three pictures of my daughter for school. I wasn’t sure exactly why they were needed. I thought maybe they would use them for their little cubbies or binders. After I dropped Penelope off I was looking at their art wall. There glaring at me is the picture I picked, grumpy Penelope in a frame that says “God made me special.” I’m clearly nailing this mom thing. Everyone else picked the most adorable, innocent, cute pictures of their two-year-old. Not me, I picked the most sassy two-year old pic I could find. Yes, God made me special

So tonight‘s recipe is Pad Thai. My son has been away over the summer and has yet to try this new recipe, so we’ll see how he likes it.(Update he loves it) I forgot a red pepper so to Earth Fare we went. This red pepper caused a scene. Penelope just lost it when I tried to take it away to pay. She’s on the floor hysterical biting into the pepper like it’s her last meal. I got home and then realized I didn’t have peanuts. OMG. I am not going back. I will sift through trail mix to get my peanuts. I try really hard to organize meals, but I am always missing something.

The summer gave me the opportunity to test run new dairy free Penelope safe recipes. I’ve kind of gotten tired of making meals for my husband and I, a different meal for my son and then a meal for my daughter because I have the most pickiest eaters. I want to be able to make one meal and everybody like it. I don’t know how it got to this point where I am taking personal orders for each family member. My son always wants something hot, spicy, and processed, my husband loves anything comfort, and my status quo toddler, chicken nuggets and fries.

I love Indian food, I crave it. My husband hates curry so I think Pad Thai is a perfect introduction to some Indian food. It’s hearty, it’s comforting, it has a little spice and my toddler likes anything with chicken so even though she might not eat everything she’ll pick out the chicken.

I found this amazing Pad Thai recipe from the Clean Eating Couple. Its amazing!!! So perfect!! Its so hard to find recipes that actually work. I probably will only add one tbsp of rice wine vinegar next time because it has a strong flavor but it still is wonderful.
