My mom’s Grilled Pesto Chicken

No cheese here, no nuts, simply garlic, olive oil and fresh basil.

My mom always has lots of fresh basil on hand. This is one of my favorite grilled chicken recipes.

1 cup olive oil

1/2 cup of shredded basil

8 cloves of garlic, pressed or sliced

2-3 chicken breast( salt and pepper)

Combine oil, basil, and garlic in a small cup or bowl. Let sit for an hour or so. The ingredients will infuse together. Heat the grill on medium high heat. Salt and pepper your chicken breast, and and coat in the garlic-basil oil. Grill for 5 min on one side, turn, and brush on the cooked side with the garlic- basil oil. Cook another five min and when ready to take off grill. Lather that chicken up with basil garlic oil. I place in tinfoil to keep the chicken warm, and juicy. I usually serve with grilled zucchini, and plain pasta with a dash or two of your fresh basil garlic oil and dairy free parm.
