Dairy Free Loaded Baked Potato Soup
one stalk of celery
1/2 cup chopped onion
3-4 cloves of garlic
4-5 russet potatoes
4 cups of chicken broth
2.5 cups of oat milk
1/2 cup of your favorite safe cheese (we used Vermont Extra Sharp Cheddar its aged long enough to be safe I you are not using aged cheeses then you can use diaya cheddar cheese)
1 tbps of flour
1/2 cup dairy free sour cream like toffuti brand
toppings:
3-4 strips of bacon crumbled
one chives/green onion chopped
1/2 cup of safe cheese we use either
onion straws
Take veggies and sautéed in 1-2 tbsp of olive oil until tender. I add garlic in the pan last and sauté for 30 seconds until fragrant. Once this is complete get a large pot and add your, veggies, chicken broth and potatoes. Boil until potatoes are tender. Once tender mash or blend until smooth.
Add sour cream, 2.5 cups of full fat oat milk, and a tbsp of flour. Blend until smooth. Simmer for another ten minutes.
Then add your favorite toppings.
