one bag of broccoli slaw or cabbage
1/2 cup of coconut milk
1 tbsp of coconut sugar
2 tbsp of pickled jalapeños diced
2 tbsp of the pickled jalapeños juice
1/4 cup packed cilantro
Mix all together and let sit in fridge for a few hours. Letting it sit makes all the ingredients really come together.
For the fish I used tilapia frozen, from Trader Joe’s. I don’t know how I can live miles from the beach and can’t find good seafood. But Trader Joe’s never disappoints.
2 pieces of tilapia(plenty for two people maybe 3)
1 tbsp of blackening seasoning(I also add a dash or two of cayenne pepper for more kick)
2 tbsps of olive oil
1/2 lime or lemon whatever you prefer I like lime
Heat oil to medium-high heat. After seasoning the tilapia with the blackening seasoning, add fish to hot pan sauté for 4 minutes each side. Fish should be white and flaky. I just cut the fish up in the pan for taco sized bites. Everyone in my family has their preferences. I like low carb tortillas, my hubby like regular flour tortillas. Trader Joe’s has an awesome Habanero Tortillas, little spicy, not what you would expect from a Habanero pepper. I add a little onion, tomato, guacamole, and dairy free sour cream. My guys like lots of cheese and sour cream. So dress your taco how you like.
(servings for two)
Strawberry Topping:
2 hand fulls of strawberries, about 10-12 strawberries, chopped
two slices of white onion chopped
3 tbsp of Balsamic vinagar
1 tbsp of strawberry jaw or jelly
about 10-15 leaves of basil chopped
2 chicken breast
Salt
Pepper
Sautee onion for about two minutes until transparent. Add strawberries, balsamic, and jam to the onion and bring to a simmer for about two minutes. Pay attention and stir while simmering, you don’t want it to burn, it will bubble up a little bit. I usually simmer on medium heat. Then simmer for another 2-4 minutes until reduction thickens. Take off heat then add basil.
Grilled Chicken- Salt, pepper and grill chicken. If you have thick chicken breast butterfly in half for thorough cooking. About 6 minutes each side, If your grill heats up fast you may want to grilled 5 min each side. I usually grill at meadium to high heat, about 400 degrees, I grill one side 6minutes, then the other for about 4-5 minutes. Every grill is different so pay attention. My Weber heats up so fast I had to get used to it. Chicken should reach internal temperature of 165 degrees.
Spoon Strawberry Basil reduction over the grilled chicken, and it is ready to go.
Brussels Sprouts:
3 tbsp of olive oil
2-3 cloves of garlic
one bag of brussels sprouts
one slice of white onion
3 strips of bacon
tsp Salt or garlic salt
tsp Pepper
Ok I learned this just a few years ago. Sautee you garlic for only about 30secs otherwise it burns and distorts the taste. Just a little sauté makes the flavor better. SO, over medium heat, I sauté the veggies and bacon together first, till onion is transparent and brussels are wilted. I then add garlic for a sauté of 30secs as the last step. My hubby hates veggies and loves this. Add salt and pepper to your liking. I like garlic salt.

Cheese Dip
Left over cheese from a chartreuse board? No problem.
1tbsp of butter
1tbsp of flour
1/2-1 cup of milk
1 cup of cubed or shredded cheese.
tsp of salt- you can skip if you want
Sauté butter on low and then add flour. As is becomes a paste add the milk. Use a whisk to blend together. It taste some time but the lumps eventually break up. Keep it low, and add your cheese. Low and slow is important so that you do not burn the bottom of the pan. Pay attention and keep mixing till melted. I add my flavorings at the end.
Tips- if you want a more liquid cheese add a little more milk or water, and mix. A little at a time.
These paring go well with spice. If you want spicy- either add a tsp of paprika and tsp of cayenne. OR like typical queso dip add can of rotelle.

Cheddar and sharp cheddars
Or if you want a herb infused garlic dip, add a tsp of garlic, and a tsp or two of all your favorite fresh herbs. I like rosemary and a little salt. I stick to lighter cheese for herbed infused. But when it comes to cheese you can really go wrong.

Found this amazing, Pad Thai recipe from the Clean Eating Couple. Its amazing!!! So perfect!! It is so hard to find recipes that actually work. I probably will only add one tbsp of rice wine vinegar next time because it has a strong flavor but it still is wonderful.
