Dairy Free Fried Ice Cream

This has to be one of my favorite desserts. I mean anything fried has to be good right??!! Why not dairy free ice cream?

Time: Takes 24hours to freeze and refreeze your ice cream.

1 pint of dairy free ice cream

2-3 eggs

4 cups of corn flakes

Peanut oil or vegetable oil for frying

Toppings: Honey, DF whipped cream,

#1 start with your favorite dairy free vanilla ice cream(or flavored it doesn’t matter but I like the simplicity of vanilla) We used Ben and Jerry’s Netflix and Chill, and PB and cookies.

plastic wrap

Place 2 spoon fulls of dairy free ice cream in the middle of your plastic wrap. Wrap up, twist, and pat into a ball and place in the freezer. See below video on how. Leave at least until hard. This is the hard part, waiting! They must be hard. I did mine before bed and they were ready in the morning to start coating.

When the ice cream is hard. Set up two bowls, and a fresh sheet of plastic wrap.

In one bowl, place your corn flakes and crush to a bread crumb texture. In the other bowl, crack open your eggs and whisk. This will be your egg wash.

One at a time, unwrap ice cream balls. Coat in egg wash, then roll/press into corn flakes. Coat one more time. It needs to be completely covered. The ice cream will not melt away in the frier if the ball is really coated well. Place on plastic, wrap up again, patting to make a ball shape and place in freezer.

( I am using regular ice cream in the video, if you are dairy free do not use. I have other family members who are not dairy free. this is just an example of a how to)

Once it refreezes time to heat up your oil.

Frying is the hard part. It needs to be around 375 degrees. I turned my stove on medium low. I take a tooth pick to the oil and if it bubbles it’s ready. Make sure you use a deep pot with plenty of room for the oil to rise up. When you place a very cold ball of ice cream inside a pot of hot oil it rises a few inches.

I don’t deep fry things often, I almost set the kitchen on fire and also melted two spoons. All because I didn’t want to clean a huge pot…lol! So I’m speaking from experience! Use a deep pot, metal spoons, and really just enough oil to cover one ball or at least 3/4 the way. My video shows what happens when you use a small pot.

One at a time from the freezer. I used my slotted spoon and gently placed the ice cream ball into the oil. I counted to ten and removed onto paper towels.

We had all sorts of toppings just like a ice cream Sunday. I like Honey and coconut whipped cream, but you can add chocolate syrup, or strawberries.
